Bring out all the colors of the rainbow with this special treat: Funfetti cake mix whoopie pies! These treats are (like everything we post) gloriously simple and delicious, not to mention just about the most adorable things ever!

What’s this recipe all about? First, we’re making cookies out of cake mix, which is already a fantastic (and tasty) idea. We’re adding our Pixie Dust sprinkles to that mix for a festive and energetic homemade Funfetti feel.

Then, finally, we’re using those Funfetti cookies to make whoopie pies. If you’ve never heard of whoopie pies, think Oreos, but with frosting in the middle and cookies as the top and bottom. Yum!

While these whoopie pies are a great surprise snack for kids (they don’t make a mess, like, at all)…you’ll probably find yourself sneaking two or three or ten if you’re not careful!

Funfetti Whoopie Pies: Ingredients & Utensils

This is a really simple recipe for a dessert that’s absolutely incredible…and unique!

Ingredients

  • 1 box of white cake mix
  • 1/2 cup vegetable oil
  • 2 eggs (room temperature is best)
  • Our Pixie Dust sprinkles
  • Your favorite frosting (we have tips about that a few sections down!)

Utensils & Other Items

  • Cookie sheet
  • Cooking spray
  • Mixing bowl
  • Cookie dough scoop

How To Make Funfetti Cake Mix Whoopie Pies

Prep time: 10 minutes

Cook time: 10-12 minutes

Yield: 36 cookies (or 18 whoopie pies!)

  1. Preheat oven to 350 degrees.
  2. Spray cookie sheet with non-stick cooking spray.
  3. Using an electric mixer, mix together cake mix, oil, eggs, and our Pixie Dust sprinkles in large mixing bowl. Make sure your batter doesn’t have any clumps!
  4. Scoop onto baking sheet. (We recommend using a cookie dough scoop!)
  5. Bake for 10-12 minutes on sheet with parchment paper.
  6. Move to wire rack to cool completely.
  7. When the cookies have cooled, make your frosting if necessary. (Or just grab your store-bought container!)
  8. Frost the flat bottom of one cookie, then press another cookie flat side on top of it to make a whoopie pie. Repeat until you have all of your whoopie pies.
  9. Serve immediately or store in an airtight container in the fridge.

How far in advance can you make these whoopie pies?

They should last about a month in the freezer. This is great for those of you who have tight schedules, right? Just bake a bunch on a free day and throw ‘em next to the ice cream!

Can you use Funfetti cake mix instead of the white cake mix?

Absolutely…we just find it fun (no pun intended) to add the sprinkles in ourselves!

Can you use other types of oil (like coconut oil)?

Yes, the recipe should still turn out basically the same!

For frosting…

You can definitely use store-bought frosting here and your whoopie pies will taste absolutely delish. However, if you want to go for the gold and make your own frosting, you can try our homemade cream cheese frosting or buttercream frosting. Of course, you could substitute any rainbow sprinkle mix with a themed mix (for example, using the Camo Mix at a boy’s birthday party, or during St. Patrick’s Day). The recipe should still turn out the same. But since we’re talking about Funfetti today, we wanted to focus on pretty little rainbow sprinkles!

Also, be aware that if you use nonpareils, they might stain your batter/cookies. If you’re fine with that, go forth and nonpareil it up! If not, stick with jimmies.
