Crockpot Recipes & I’m Up and Running Again!!

My new computer arrived and I’ve got it all set up and running, thanks to my IT tech son! And thankfully I was able to avoid Windows 8 and still running Windows 7. So hopefully I’ll be back to blogging regularly again!

With summer here I’ve not wanted to heat up my kitchen any more than necessary so I’ve been using my crockpot a lot. Also I’ve been in a “the simpler, the better” mood when it comes to cooking. The outdoors calls my name and the kitchen does not this time of year! ~smile~

Here are a couple recipes I’ve made recently that were very good and simple to throw together.

Crockpot BBQ Kielbasa (you can adjust the size of this recipe easily to work for your family)

3lbs kielbasa (I actually used chicken sausage from Costco. The brand was Aidells)
1 onion, sliced
5 or 6 large mushrooms, sliced
1 bottle (more or less) bbq sauce (the size is not that important as the main goal is just to cover the sausages & veggies with it. I used about 2 or 3 cups)

Put kielbasa, onions, and mushrooms in crockpot. Cover with sauce and stir. Put lid on. Cook on low for about 3 to 4 hours. I served this with rice and coleslaw.

Easy Crockpot Chicken Chili

2 ½ lbs boneless, skinless chicken thighs
1 29oz can pinto beans, do not drain
2 14oz cans chili beans, do not drain
1 14oz can red beans, drained
1 can rotel tomatoes
8 oz. cream cheese

Put all ingredients into crockpot. Turn on low and let cook for about 6 to 8 hours. When it's time to serve, shred chicken meat. I served this with tortilla chips & salsa and a salad.

    Crystal,
    Do you have any idea how to use Korean BBQ? It's the regular kind made with Korean pear and apple. I haven't opened it to taste it but I'm wondering what to do with it. Could I make the BBQ Kielbasa using this sauce? Is appears to be a marinade for the Korean beef but maybe I could use the entire bottle in your recipe. Maybe not?

      Alice, I've never tried it.. I have used my own Korean BBQ marinade on many different meats. I don't see why this would not work.. if it was me, I'd give it a try! :) Crystal :)

I had 4 large heads of cabbage that weighted about 25 pounds. We had some really hot days and I figured I better get the last of them picked soon. Canning Chicken Noodle-less Soup

Today was one of those busy days that it seemed I was moving from the time my feet hit the floor until this evening.. But, I got so much done and that is a great feeling! :) One of my accomplishments today was canning 14 jars of chicken noodle-less soup. I call it “noodle-less” because you can’t can noodles. They end up falling apart. So I canned the chicken, veggies and broth. When I go to use the soup I will bring it to a boil and then add a handful of noodles (any type of pasta will work) and cook it until the noodles are done. Because I plan to add the pasta after the fact I wanted to make sure there was enough chicken broth to do this. So I only filled my jars about half to two thirds with chicken and veggies and then filled with chicken broth. Here is how I did this…. All Purpose Muffin Mix

All Purpose Muffin Mix 18 cups flour, whole wheat pastry or white flour or a combination of both 5 cups sugar or cane juice crystal’s 2 ¼ cups powdered milk 6 T baking powder 2 T baking soda 2 T salt 3 T cinnamon 3 t nutmeg Combine all ingredients into a very large mixing bowl. Stir until everything is mixed evenly. Spoon the mix into either gallon size zip type bags or empty and clean coffee cans. To keep this mix fresh it needs to be stored in the freezer. To make 2 dozen muffins: In a large bowl mix: 3 eggs 3 t. vanilla 2 cups water ½ cup butter (melted first) or oil of choice such as light olive oil, avocado oil, etc.. **See note below Now add to above mixture: 5 ½ cups muffin mix Any other OPTIONAL ingredients according to recipes that follow Spoon muffin batter evenly between 2 muffin pans.
